Garlicky Crab Bites

If I’ve learned anything about cooking over the years, it’s that good food doesn’t need to be complicated. This is especially handy to know when throwing a party. Sure, I like to wow my guests just as much as the next person, but I’ve found that folks tend to gravitate towards the no-fuss treats on the table. These Garlicky Crab Bites fit that bill. This week the #SundaySupper crew is hosting a Super Bowl party, and y’all are invited … the table is packed with all sorts of wonderful goodies including appetizers, sammies and even some desserts … nothing too fussy and everything quite yummy.

Most of my appetizers come from my mom’s repertoire, and everyone knows all about the “bacon cheese things,” a simple, yet irresistible appetizer. My mom always hosted the best parties, and despite being a big production, food wise, she made it look effortless. Just on her side alone, this Swiss-Italian family could easily fill a house. And that’s just the first cousins! The key was organization. And the goal was to keep the appetizers and martinis flowing. I was her server, and I could be entrusted with just about anything except a platter of her crab hors d’oeuvres. One for the platter, one for me. One for a guest, one for me. It was too easy to pop one in the mouth, and I couldn’t seem to help myself. While I’m still working on the self-control, these Garlicky Crab Bites remain my all-time fave.

Garlicky Crab Bites

In a medium bowl, mix together the crab meat, mayo, garlic, and Tabasco.  Don’t worry about cracking crabs yourself–most supermarkets now have small tubs of fresh crab meat at the fish counter. By the way, feel free to toss in a handful of shredded cheese, if the mood strikes you.

Cut the bread rounds and place them on a cookie sheet. I used Orowheat Potato Bread today, but any white bread is fine.  Also, I used a 1 1/2″ biscuit/cookie cutter to make the rounds, but I’m sure you could use the rim of a shot glass in a pinch!

Using a teaspoon, spoon the crab mixture onto each round. There should be enough mixture to make about 30 appetizers, unless you keep sampling the crab mix.

Pop them under the broiler, and pull them out when they’re all hot and bubbly. Sprinkle with chopped chives.

A scoop of fresh crab mixed with garlic and mayo, sitting atop a round of toast makes the perfect bite.

Ingredients
  • 8 oz fresh crab meat
  • ¼ cup mayonnaise
  • 1-2 cloves garlic, crushed
  • 2 dashes Tabasco sauce
  • 6-7 slices white bread
  • Chopped chives for garnish
Instructions
  1. In a medium bowl, mix together the crab, mayonnaise, garlic, and Tabasco.
  2. Cut bread into rounds with a 1½" biscuit cutter and place rounds on a cookie sheet.
  3. Spoon one teaspoon of the crab mixture onto each round.
  4. Broil until golden and bubbly (watch closely--this doesn't take long)
  5. Arrange on a serving platter and garnish with chopped chives. Serve immediately. Makes 30 rounds.

Oh I so agree. I get so frustrated when someone tells me the reason they eat out all the time, or the reason they buy pre-made meals from the store is they like good food but it is too hard to make themselves. I love that this looks so elegant but is so simple. Great job.
