This classic Shrimp Louie is loaded with bay shrimp, hard-boiled eggs, avocado, black olives and topped with a homemade Louie dressing.

Ingredients
Louie Dressing
1 cup mayonnaise
⅓ cup ketchup
1 large clove garlic, crushed
2-3 teaspoons fresh lemon juice
Salt and pepper to taste
Salad
1 lb salad shrimp, washed and drained
Iceberg lettuce, shredded
Tomato wedges
4 hard-boiled eggs
Avocado, sliced
Roasted beets, sliced
Lemons for garnish
Instructions
In a small bowl, mix together the mayonnaise, ketchup, garlic, lemon juice, and salt and pepper. Cover and let sit for about 30 minutes so the flavors blend.
Arrange the salad fixin's decoratively on a serving platter and serve with the chilled dressing on the side.
Notes
I tend to eyeball things with this, mainly the ketchup and lemon juice amounts, which are never exact but tweaked until the flavor is just right to me!
