This classic Shrimp Louie is loaded with bay shrimp, hard-boiled eggs, avocado, black olives and topped with a homemade Louie dressing.

Louie Dressing
  • 1 cup mayonnaise
  • ⅓ cup ketchup
  • 1 large clove garlic, crushed
  • 2-3 teaspoons fresh lemon juice
  • Salt and pepper to taste
  • 1 lb salad shrimp, washed and drained
  • Iceberg lettuce, shredded
  • Tomato wedges
  • 4 hard-boiled eggs
  • Avocado, sliced
  • Roasted beets, sliced
  • Lemons for garnish
  1. In a small bowl, mix together the mayonnaise, ketchup, garlic, lemon juice, and salt and pepper. Cover and let sit for about 30 minutes so the flavors blend.
  2. Arrange the salad fixin's decoratively on a serving platter and serve with the chilled dressing on the side.
I tend to eyeball things with this, mainly the ketchup and lemon juice amounts, which are never exact but tweaked until the flavor is just right to me!
