A cornmeal crust is filled with a savory meat mixture and topped with cheese in this classic tamale pie.

Ingredients
  • 1½ cups cold water
  • 1½ cups yellow corn meal
  • 2 cups boiling water
  • 2 tsps salt, divided
  • 1 4oz can diced chiles
  • 1 lb lean ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, chopped
  • 2 tbsp flour
  • 2 tsp chili powder
  • 1 14 oz can diced tomatoes
  • 1 8oz can tomato sauce
  • ¾ cup frozen corn, thawed
  • 1 4oz can sliced black olives
  • ½ cup shredded cheddar cheese
Instructions
  1. Preheat oven to 350F.
  2. Combine cold water and corn meal, set aside.
  3. Bring 2 cups water to a boil, add 1 teaspoon salt, then stir in the cold cornmeal mixture. Cook slowly until liquid is absorbed--about 7 minutes. Remove from heat and stir in the diced chiles.
  4. Spray a 2-quart casserole with non-stick spray, and line the sides of the dish with the cooked cornmeal.
  5. In a large frying pan, saute the ground beef, onions, and garlic over medium heat. Break up the meat as it browns. When the meat is cooked through, stir in the flour, remaining 1 teaspoon of salt, and the chili powder.
  6. Next stir in the tomatoes, tomato sauce, corn, and black olives. Remove from heat and spoon into cornmeal-lined casserole dish. Sprinkle the shredded cheddar cheese evenly over the top.
  7. Bake until hot and bubbly--about 40-45 minutes.
