These double chocolate sables are filled with such intense chocolate flavor, it's hard to eat just one.

Ingredients
1 cup all-purpose flour
½ cup unsweetened cocoa powder
½ tsp baking soda
½ cup unsalted butter, softened
⅔ cup sugar
¼ tsp sea salt
¾ tsp vanilla
3½ ounces 70% cacao chocolate, grated
White Sparkling Sugar Sprinkles for garnish
Instructions
Preheat oven to 350F.
Line baking sheet with parchment paper.
Sift the flour, cocoa powder, and baking soda into a medium bowl and set aside.
In a mixer bowl, cream together the butter, sugar, salt, and vanilla, until light and fluffy. Gradually add the flour mixture and grated chocolate, until combined.
Roll out the dough on a lightly floured surface, about ½ inch thick. With a sharp knife, cut the dough into 1-inch squares. Place about 2 inches apart on the baking sheet, and sprinkle with the sparkling sugar.
Bake about 10-12 minutes, or until the cookies are firm. Cool completely on a wire rack.
Makes about 3 dozen.
