These double chocolate sables are filled with such intense chocolate flavor, it's hard to eat just one.

Ingredients
  • 1 cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ tsp baking soda
  • ½ cup unsalted butter, softened
  • ⅔ cup sugar
  • ¼ tsp sea salt
  • ¾ tsp vanilla
  • 3½ ounces 70% cacao chocolate, grated
  • White Sparkling Sugar Sprinkles for garnish
Instructions
  1. Preheat oven to 350F.
  2. Line baking sheet with parchment paper.
  3. Sift the flour, cocoa powder, and baking soda into a medium bowl and set aside.
  4. In a mixer bowl, cream together the butter, sugar, salt, and vanilla, until light and fluffy. Gradually add the flour mixture and grated chocolate, until combined.
  5. Roll out the dough on a lightly floured surface, about ½ inch thick. With a sharp knife, cut the dough into 1-inch squares. Place about 2 inches apart on the baking sheet, and sprinkle with the sparkling sugar.
  6. Bake about 10-12 minutes, or until the cookies are firm. Cool completely on a wire rack.
  7. Makes about 3 dozen.
