This apple cake is super easy to make and gets rave reviews every time.

Ingredients
  • 2 cups chopped apple (1 - 2 large apples)
  • 1 egg, beaten
  • ½ cup sugar
  • ½ cup brown sugar
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • ¼ tsp nutmeg
  • ¼ cup vegetable oil
  • ½ cup chopped walnuts (optional)
  • ½ cup raisins (optional)
  • 1 cup flour
  • 1 tsp baking soda
  • ¼ tsp salt
Instructions
  1. Preheat oven to 350F.
  2. Grease and flour an 8" square baking pan.
  3. Combine apple, egg and sugars. Mix well.
  4. Stir in spices, vanilla and oil, along with raisins and nuts, if using.
  5. Sift together flour, salt and baking soda, then add to apple mixture. Stir until dry ingredients are completely moistened.
  6. Spread evenly in pan and bake 40-45 minutes until done.
Notes
Best served warm.
