You’re probably wondering what’s up with all the vegan and gluten-free recipes lately. Well, we’re trying to eat a little healthier around here. Sure, we love a fat, juicy burger just as much as the next person, but the fact is as we get older we need to be a little more mindful about what we put in our bodies. So, when Bea over at The Not So Cheesy Kitchen decided to host a “free for all” theme for #SundaySupper (that is, fat-free, gluten-free, dairy-free, whatever free), I was all over it! And I’m bringing this yummy vegan mac and “cheese” bake. I had intended my Memorial Day post to be about barbecue. Serious barbecue. We’re talking a whole hog. I had all the pictures lined up, but the instructions, which are admittedly a bit involved, didn’t quite come together before I took off for Camp Blogaway. So, here I am, on the eve before my road trip, writing about this easy cheezy vegan chorizo pasta bake instead. It’s all good, as you’re gonna love this recipe. I’ve learned you can never go wrong with creamy cheesy pasta dishes!

There’s something magical about the way a clay cooker effortlessly transforms a few simple ingredients into a guest-worthy meal. Take this chicken, for example–it’s irresistibly moist, and the meat is infused with the flavors of garlic, lemon, and thyme. Despite what seems to be an excessive amount of garlic, it never overpowers the dish. The garlic simply mellows out becoming buttery and begging to be spread on a slice of french bread.

Cinco de Mayo is a holiday marking the Mexican army’s victory over France at the Battle of Puebla in 1862. While it’s a relatively minor holiday in Mexico, in the United States it has grown to be a major celebration of Mexican heritage and culture. We love a good party! It’s so fitting that this week’s #SundaySupper is all about parties–bridal and baby showers in particular hosted by Home Cooking Memories. I’ve been on a baking kick, so I’m bringing this French Country Flat Pie, loaded with onions, potatoes, and Gruyère cheese, all nestled in a biscuit crust. Good food doesn’t need to be fancy or expensive–in fact, over the years I’ve learned that sometimes the simplest meals are the best. Take, for instance, this Spinach Chicken Parmesan Pasta. Literally just a handful of ingredients come together in a superbly flavored dish. Plus, you’ve got at least three food groups going on here–there’s whole grain pasta, chicken for protein, spinach for your veggie… add a glass of milk, and you’ve got just about everything a body needs. Best of all, you probably have most, if not all, of the ingredients on hand. All together, the ingredients cost less than $10, and this will easily feed four, with a little leftover for your lunch the next day.
