Vern’s Seafood Pasta Salad

My cousin Vern sells this salad at his deli in Rohnert Park, California. Once he started bringing it to family gatherings, I became addicted.  It’s super easy to make, tastes fantastic, and it’s perfect for potlucks.

Serves: 6-8
Ingredients
  • 1 lb package small seashell pasta, cooked and drained
  • 2 tbsp sweet pickle relish
  • small can chopped olives
  • half red bell pepper, chopped
  • 3-4 stalks celery, chopped
  • 1 bunch green onions, chopped
  • ½ lb imitation seafood, chopped
  • 12 oz salad shrimp (the kind that's already cooked)
  • Salt, pepper, garlic powder, all to taste
  • Dash Tabasco
  • Mayonnaise
Instructions
  1. In a very large bowl, combine all ingredients EXCEPT mayonnaise. Toss in mayonnaise until all ingredients are moistened. That's it!
  2. For best results, chill for a few hours in the fridge so that flavors can blend. Stir before serving.
