  • 1 tablespoon pesto
  • 1 cup red onion, thinly sliced
  • 1 small zucchini, cut into thin strips
  • Pinch salt
  • Pinch pepper
  • ¼ cup packed fresh basil leaves
  • ½ garlic clove
  • 1 tablespoon reduced-fat grated parmesan cheese
  • 2 tablespoons plain low-fat yogurt
  • ¼ teaspoon lemon juice
  • 2 teaspoons pignoli nuts
  • 1 Weight Watchers 100-percent Whole Wheat Pita Pocket, toasted
Instructions
  1. Preheat oven to 350 F. Lightly coat a baking sheet with nonstick spray. Arrange red onion and zucchini in a single layer across baking sheet; season with salt and pepper. Roast until vegetables soften, about 25 minutes. Remove from heat promptly and set aside to cool slightly.
  2. Meanwhile, to make the pesto, combine basil leaves, garlic, cheese and yogurt in a food processor and pulse on medium-high speed until smooth and well blended. Transfer mixture to medium bowl and stir in lemon juice and pignoli nuts. Add vegetables and toss to coat. Spoon vegetable-pesto mixture into pita pocket. You can serve this sandwich whole, or cut into small pieces perfect for a tapas party.

Bing Cherry Thumbprint Cookies

Ingredients
CHERRY JAM
  • 1 pound fresh California Bing cherries, washed and pitted (about 2 cups)
  • ⅛ cup water
  • 1 teaspoon lemon juice
  • 1 teaspoon grated lemon zest
  • 1 cup sugar
COOKIE DOUGH
  • 1 cup (2 sticks) unsalted butter, softened
  • ¾ cup sugar
  • 1 egg
  • 1 teaspoon vanilla or almond extract
  • 2 cups flour
Instructions
  1. Preheat oven to 350 degrees
For jam:
  1. Combine cherries and water in a small pot and simmer over low heat until fruit is tender, about 10 minutes.
  2. Add lemon juice, zest, and sugar and stir gently until sugar dissolves.
  3. Bring to a boil and boil rapidly for 10 minutes, stirring occasionally, until thick and syrupy. Pour into a shallow bowl and cool, or alternately refrigerate until jam is set. This can be made a day ahead.
For cookies:
  1. Beat butter and sugar with an electric mixer until creamy. Beat in egg and vanilla or almond extract.
  2. Add flour and mix until just combined. Form dough into 1-inch balls and arrange on an ungreased cookie sheet.
  3. Using your thumb, make an impression in the center of each ball. Fill each cookie with cherry jam making sure each has a cherry in the center.
  4. Bake for 12 to 15 minutes, until the dough is set and lightly browned on bottom. Remove from pan and cool on a wire rack.
  5. Makes two to three dozen cookies.
Notes
For more uniform cookies, refrigerate the dough for 30 minutes before forming into balls.

Fun Facts About Cherries

* Not only are cherries delicious, they’re a nutritious snack. Cherries are low in calories and high in vitamins A and C and antioxidants.

* It takes about 250 cherries to make a cherry pie.

* There are about 7,000 cherries on the average cherry tree.

* The cherry is related to almonds, peaches, plums and apricots.

* California Bing cherries have a peak harvest from late May to mid-June. The season is short so they’re only available for a limited time, but stock up because you can freeze them!

* Weather conditions this year have been excellent to produce a great crop of Bing cherries.

*Cherries are one of the few produce items that truly has a season rather than being available all year long, so get them while they last.

Fun with Cherries

* Cherries are easy to eat – just rinse with cold water, put into a bowl and send the kids outside to make a juicy mess.

  • 1 cup sugar
  • 1 cup water
  • 1 pound fresh California Bing cherries, washed and pitted (about 2 cups)

Instructions
  1. Heat sugar and 1 cup water in a small pot until sugar dissolves. Add 1 cup cherries, bring to a boil and boil until the cherries begin to soften, about two to three minutes. Set aside to cool.
  2. Strain cooled cherry syrup into a large pitcher, pressing on the cherries to release their juice. Add lemon juice and cold water. Stir in remaining cherries. Pour over ice and garnish with fresh mint.

Hot House Enchilada Gravy

I tracked down this recipe a few years back. I don’t know for sure whether this was the official recipe, but it does taste pretty darn close. The flavor relies almost entirely upon the chili powder, so you may need to try a few different brands before finding the right one. I’ve found that “Grandma’s” best matches my memory of the hot house gravy. Enjoy!

Hot House Enchilada Gravy

Ingredients
  • ⅓ cup oil
  • ⅔ cup flour
  • 6 cups chicken broth
  • 4 Tablespoons chili powder
  • ½ teaspoon salt
Instructions
  1. In a large frying pan:
  2. add oil, heat to very warm,. While whisking add flour and cook about 1 minute. Add salt. Add broth and continue to whisk until thickened. Continue cooking another few minutes.
  3. If it gets too thick....add water a little at a time to thin.

Ingredients
  • ¾ cup cold espresso or strong coffee
  • ¼ cup coffee liqueur
  • 1 package (8 ounces) cream cheese, softened
  • 2 packages (3.4 ounces) instant vanilla pudding mix
  • 3 cups half-and-half
  • 3 tablespoons. Amaretto liqueur
  • 4 ounces semisweet chocolate bar, finely chopped
  • 1 16-ounce loaf of King's Hawaiian Sweet Bread
Topping:
  • 1½ cups whipping cream
  • ½ cup powdered sugar
  • 1 teaspoon vanilla
  • ¼ cup sliced almonds, toasted
Instructions
  1. Blend espresso with coffee liqueur. Set aside.
  2. Beat cream cheese with electric mixer until smooth. On low speed, slowly add pudding mix, half-and-half and amaretto. Beat one minute until blended. Set aside.
  3. Trim off 1 inch of bread dome to make level. Cutting horizontally, slice remaining loaf into three equal layers.
  4. To assemble cake, place the top slice into the bottom of an 8- or 9-inch springform pan. Drizzle ⅓ of espresso mixture evenly over first layer. Top with ⅓ of pudding mixture and then ¼ of chocolate.
  5. Repeat layering with remaining 2 bread slices. Cover with plastic wrap and refrigerate 4 hours or overnight.
Topping:
  1. Remove rim from pan. Whip cream with powdered sugar and vanilla until fluffy. Spread over top and sides. Garnish top with almonds and remaining chocolate.

King’s Hawaiian Chocolate Bread Pudding

Ingredients
  • 6 cups (about half of 16-ounce. loaf) King's Hawaiian Sweet Bread, lightly packed ½-inch cubes
  • 2½ cups half-and-half
  • 1½ cups (9 ounces.) semi-sweet chocolate chips
  • 4 large eggs
  • ¼ cups granulated sugar
  • 1 teaspoon vanilla
  • ⅛ teaspoon salt
Instructions
  1. Heat half-and-half in 2-quart saucepan over medium heat until small bubbles form around edge.
  2. Remove from heat, stir in chocolate, mix until melted. Cool slightly.
  3. Whisk together eggs, sugar, vanilla and salt. Fold 1 cup cooled chocolate into egg mixture. Stir in remaining chocolate until blended.
  4. Pour chocolate mixture over bread cubes and mix until bread is well coated.
  5. Cover and let stand at room temperature for 30 minutes.
  6. Lightly apply non-stick spray to six 6-ounce custard cups. Mound bread equally into each cup. Place cups on baking sheet.
  7. Bake in preheated 325 degree F oven 35 to 40 minutes or until knife inserted in center comes out nearly clean.
  8. Best served warm with chocolate or vanilla sauce. (A greased 8 by 8 by 2-inch pan may be substituted.) Bake 40 to 45 minutes in preheated 325 degree F oven.

  • 1 jar chunky peanut butter
  • Mini-marshmallows
  • 1 16-ounce round loaf, King's Hawaiian Sweet Bread
Instructions
  1. Preheat your Panini sandwich press.
  2. Cut ½-inch thick vertical slices into the King's Hawaiian round loaf. Evenly layer peanut butter on one slice and the chocolate hazelnut spread on the other.
  3. Distribute an even layer of marshmallows and place the halves together.
  4. Place sandwich into the press and, depending on the heat, remove after two to four minutes. Cut into halves or thirds. -- Serve immediately.
